When the weather is warm the only thing that can truly sate me is a long, refreshing beverage.
I still remember the first time I sipped on a peach ice tea. I was on holiday in Austria with my family, we had just gone white water rafting and it was blisteringly hot. To my nine year old mind (pre discovering mojitos and bellinis) it was the most wonderful thing I had ever drunk. The obsession has continued even after my introduction to harder beverages and the humble Lipton drink is still one of my favourites – though I have never been brave enough to look at quite how much sugar goes into making it so delicious.
Today, on another blisteringly hot day I share my own take on PIT – super simple to make (the best drinks always are) and garnished with a spring of thyme and a slice of lemon to hit your senses with fresh flavours before you have even started drinking. Enjoy!
Serves 4 – 6
Prep time: 20 minutes
Infusing time: 2 hours
Ingredients
- 3 English breakfast tea teabags
- 8 very ripe peaches, stone removed
- 3 tbsp sugar syrup
- 1 lemon, thinly sliced
- bunch of thyme
- ice cubes
Method
- Roughly chop up the peaches. Pour into a food processor with the sugar syrup and blend until smooth.
- Place the tea bags in a heat proof jug and pour on 1.3 litres of boiling hot water. Leave to soak for three minutes before removing the tea bags. Use a sieve to strain the peach puree into the tea, using a spoon to push through excess juice if necessary. Stir the tea and peach mixture together until combined. Leave to infuse for 2 hours.
- Strain the mixture through a sieve again and into a serving jug. Add a handful of ice to the jug and place a few in each glass. Garnish with a thinly cut slice of lemon and a sprig of thyme.

I am so excited to make this! I LOVE fresh peach but cannot stand “artificial” peach. Thank you for this wonderful recipe. It will be a delicious anytime (but especially evening) summer treat (in place of the wine I used to drink!)
